In rural Romania, fermentation wasn’t trendy—it was survival. Every September, families raided farmers’ markets for the last tomatoes, cucumbers, cabbages, and peppers. They’d spend days chopping, salting, and packing into giant clay pots. By winter, these preserves fed entire households.

“We never thought of it as ‘health food,’” says Mihaela Ivancenco. “It was just food. My grandmother, my mother, now my nephew—he’s 24 and still ferments every autumn.”
